This is a Honey Process coffee: after harvest, the cherries are pulped but left covered in their sweet nectar — the “mucilage” — as they dry on African drying beds for 17 days, letting those sugars soak straight into the bean. The result is a silky, honeyed cup with a bright, lingering finish.
Best as: pour over or drip, where the clarity really shines. Equally good black or with a splash of milk.
